Ingredients (use vegan versions):

Risotto:
2 (5-ounce) bags dried wild mushrooms, rehydrated and sliced
4 tablespoons olive oil, divided
1/2 small yellow onion, chopped
salt, to taste
3 cloves garlic, minced, divided
1 cup white rice
1/4 cup chiffonaded basil
1/4 cup chopped parsley
1 tablespoon fresh rosemary, chopped
2 tablespoons vegan Parmesan, or to taste
pepper, to taste
2 cups vegetable broth (or 1 bouillon cube and 2 cups water)
