Chocolate Mocha Cake

Ingredients (use vegan versions):

3 cups unbleached all purpose flour, sifted
1 cup unsweetened cocoa powder, sifted
1 1/2 cups sugar
1 teaspoon salt
2 teaspoons baking soda
2 cups cold coffee
1 cup canola oil
1 tablespoon pure vanilla extract
1 tablespoon white vinegar

Directions:

1. Preheat oven to 350 degrees F. Spray a 13×9″ metal cake pan with cooking spray. In a large bowl, combine the flour, cocoa powder, sugar, salt, and baking soda together.

2. Make a large hole in the middle of the mix and add the coffee, canola oil, vanilla extract, and white vinegar into the hole.
