“Creamy” White Bean Soup

Ingredients (use vegan versions):

2 tablespoons olive oil (or enough to saute)
1 medium yellow onion, chopped
4 medium carrots, sliced
3 small celery ribs, sliced
5 garlic cloves
8 fresh basil leaves, chopped up (8 tablespoons dried is fine too)
4 cups vegetable broth
2 (15-ounce) cans white beans
1 tablespoon nutritional yeast
1 cup kale, chopped
salt, to taste
pepper, to taste

1. In a pot over medium-high heat, heat olive oil, then add the onion, carrots, celery, garlic, and basil; saute until the onion is translucent.
