Fresh Herb Mushroom Risotto

 

 

 

 

Ingredients (use vegan versions):

2 shallots, chopped
olive oil, as needed
5 garlic cloves, chopped
2 cups mushrooms, sliced
1/2 cup fresh parsley, chopped
salt and pepper, to taste
3 cups broth
1 1/2 cups arborio rice
1/2 cup cooking sherry
1/2 cup fresh basil, chopped
1 1/2 cups watercress, chopped

Directions:

1. In a large pot, saute the shallots until they are sweating. Stir in garlic, and when it’s fragrant, add mushrooms, parsley salt and pepper.
