Garlic and Ginger Tofu

Ingredients (use vegan versions):

1 (14 ounce) package extra firm tofu, cubed
spray olive oil, as needed
1/8-1/4 cup corn starch, as needed
1-2 tablespoons coconut oil
1 large green pepper, chopped
1 medium onion (yellow or white), chopped
1-2″ piece fresh ginger, peeled and sliced into thin strips
2-3 cloves garlic, diced
1/4 cup soy sauce

Directions:

1. Place tofu cubes between 2 plates with paper towels just long enough to get the water out. I usually leave it for about 10 minutes, then change the paper towels and leave for about another 10 minutes.
