Ginger Lime “Chicken” Stirfry

Ingredients (use vegan versions):

6 tablespoons safflower or coconut oil, divided
1 large or 2 small zucchini, sliced into half-moons
1 orange bell pepper, cut into strips
1 cup fresh broccoli florets
salt and pepper, to taste
1/2 tablespoon granulated garlic
1 cup fresh snap peas
1/8 cup water
1 small lime, zested and juiced, divided
1″ piece fresh ginger, grated
1 (12 ounce) package vegan chicken strips (I use Lightlife Smart Strips Chicken Style)
3 cups cooked rice, cooled
sprinkle red pepper flakes, optional
sprinkle Bragg’s liquid aminos
