Ingredients (use vegan versions):

1 cup rice (preferably basmati)
3/4 cup split mung beans (moong dhal)
2 tablespoons oil
1/2 teaspoon cumin seeds
1/2 teaspoon mustard seeds
1/4 teaspoon asafetida
1/2 teaspoon ground roasted coriander seeds
1/2 teaspoon turmeric powder
1/2 teaspoon garam masala (I use Rajah brand)
1/2 cup frozen peas
1/2 cup carrots, diced
2 plum tomatoes, diced
1/2 lemon
salt, to taste
