rice spilledWhen I get bored with the usual, usual, I flip through cookbooks, looking for inspiration.

This time, I got my inspiration from an American chef who specializes in Mexican cuisine. Now, I’m not crazy for Mexican food (I like it well enough, but if I was stranded on an island, I would not crave it), but there is something about this dish, something special, that makes me think I am not appreciating Mexican food to it’s fullest and I need to explore a bit more.
