Roasted Cauliflower with Indian Spices

Ingredients (use vegan versions):

2 tablespoons canola oil
3/4 teaspoon salt
1 teaspoon garam masala
1/2 teaspoon ground cumin
1/4 teaspoon turmeric
1/4 teaspoon coriander
1/4 teaspoon garlic powder
1 large head cauliflower, chopped to florets


1. Preheat oven to 400 degrees F. Line a large, rimmed baking pan (11 x 15″ works nicely) with foil (you don’t have to do this, but it makes cleanup a lot easier).
