Smoky Baked Veggie Kabobs

Ingredients (use vegan versions):

1/4 cup olive oil
1/4 cup white cooking wine
2 tablespoons Bragg’s liquid aminos (or soy sauce)
1/2 teaspoon liquid smoke
1 1/2 teaspoons dried dill weed
2 large cloves garlic, minced

1 medium red bell pepper, chopped 2″
1 medium yellow bell pepper, chopped 2″
1 medium yellow summer squash, chopped 2″
1 medium zucchini, chopped 2″
1/4-1/2 medium red onion, chopped 2″  (use sparingly as they can be strong)
1 (8 ounce) package sliced button mushrooms
1 (14 ounce) package extra firm tofu, drained, pressed, and chopped 2″
