Spaghetti with Roasted Garlic and Artichokes

Ingredients (use vegan versions):

2 (14 ounce) cans artichoke hearts
2 tablespoons olive oil, optional
1 whole head garlic
1 (15 ounce) can tomato sauce
1/4 cup fresh chopped Italian parsley, plus more for garnish, if desired
Italian spices, to taste (I use basil, oregano, and marjoram)
black pepper, to taste
1-2 tablespoons flour, as needed
4 ounces whole wheat spaghetti
4 cups water
1 tablespoon capers
