Super Chickpea and Tofu Breakfast

Ingredients (use vegan versions):

2 cups chickpeas, drained
1/3 pound tofu, chopped
1 1/2 cups raw spinach, chopped
nutritional yeast, to taste
soy sauce, to taste
garlic powder, to taste
1 cup button mushrooms, sliced
1 onion, chopped
oil, as needed (I used canola)
1/2 large tomato, chopped

Directions:

1. Place chickpeas in a large bowl. Add tofu to bowl, and mash as you would potatoes. Keep mashing until the tofu is well dispersed, but the chickpeas are still a bit chunky.
