Tomato Quinoa Soup

Ingredients (use vegan versions):

4-1/2 cups water + water for cooking potatoes, divided
4 large potatoes
1 cup uncooked quinoa
1 tablespoon olive oil
3/4 cup chopped red onion
3/4 cup thinly sliced celery
2 (10.75-ounce) cans tomato soup (I use Campbell’s)
1 (15-ounce) can corn, rinsed and drained
2 cloves minced garlic
1 teaspoon dried basil
1 teaspoon black pepper
1 teaspoon salt

Directions:
