White Beans with Broccoli and Carrot Sauce

Ingredients (use vegan versions):

6-8 fresh carrots, sliced
1/2 tablespoon olive oil
3 garlic cloves, minced
1/2 medium onion, chopped
2 cups broccoli, chopped (fresh or frozen)
1 (15 ounce) can white beans or 2 cups cooked dried white beans
1 cup coconut milk (can use light)
1 teaspoon ginger powder
1 teaspoon curry powder
1 tablespoon maple syrup
salt and pepper, to taste

Directions:
